①•Eggplant chips sand with anchovy and garlic cream and micro oregano.
•Capsule of pear and pecorino. Grated Wasabi on top.
•Seared Kamasu fish skin side with new potato (from Murakami farm)puree,simmered fennel,mango and micro lemon balm.
•Grilled Tilefish named“UROKOYAKI”(seared scales in a moment)with avocado and basil.
•Soft pumpkin mousse and foie gras terrine with foam of rosemary tea.
•Trofie:Handmade short pasta (shape like paper string)with Japanese glass shrimp,turnip,Indian spinach. Dried New Zealand spinach on top.
•Spaghetti alla Carbonara with several kinds of natural mushrooms from Mt. Shirakami.
Secondo Piatto(Main dish)
•Low temperature roasted Cintasenese pork (smoked with straw)with Shimanto chestnuts paste,red onion agrodolce (sweet and sour pickles)and black pepper.
※You may change main dish to Charcoal roasted dry aging beef with Jerusalem artichoke puree,maldon sea salt,black pepper,crude green pepper and horseradish. (Additional fee ¥2,500)
