Menu Ristorazione

Inizio(Amuse bouches)
•Boiled squid with squid ink wrapped in agar film .
   •Aosa Norichips.
   •Water shield (a jelly from a water plant) and its puree with Rhubarb jam.

Prosciutto(uncured ham)broth. 

Antipasti (3Starters)
•Sauteed Green asparagas (from Jet farm in Hokkaido)and horse meat cured with Kombu, tarreggio cheese sauce and passionfruit.

•Fried prawn with charred green onion powder and cooked green vegetables. 

•Soft pumpkin mousse and foie gras terrine with foam of rosemary tea.

Primo Piatto(Pasta)
•Tagliolini kneaded with estratto(Estratto is Sicilian concentrated tomato paste) and a shijimi clam stock , yellow leek , Japanese walnuts.

Piatto Unico(Risotto+Fish)
•Grilled Risotto with watercress puree and confit Ayu(fresh water fish)from Tenryu river in Nagano. 
Topped with Edamame, perilla flower, anchovy powder.

Secondo Piatto(Main dish)
•Roasted Shamo(a chewy chicken) with baked King shiitake mushroom ,king shiitake sauce and baked baby corn.

You may change the main dish to Charcoal roasted dry aged beef with Jerusalem artichoke puree, maldon sea salt, black pepper, green pepper and horseradish. (Additional fee ¥2,500)

Pre Dolce(Entremets)
•Cassatina (Ricotta mousse, celery gelato, pine nuts)

•White peach compote and hazelnut mousse semifreddo, basil gelato, languedesha with white pepper.
